Gingerbread Protein Cookies


  • 1 tbsp flaxseed meal
  • 2 tbsp water
  • ⅓ cup creamy peanut butter
  • 2 tbsp maple syrup
  • 1 tbsp molasses
  • 2 tbsp (30g) Gold Standard 100% Plant Protein powder
  • 2 tbsp coconut flour
  • ½ tsp baking soda
  • 1 tsp ginger
  • 1 tsp cinnamon
  • ¼ tsp nutmeg


  1. Preheat the oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper.
  2. Combine flaxseed meal and water in a bowl and allow it to sit for 5 minutes. Add peanut butter, maple syrup, and molasses. Whisk until creamy.
  3. Add protein powder, coconut flour, baking soda, and spices. Use a wooden spoon or spatula to stir until a soft dough forms. Take roughly 2 tbsp of dough at a time and roll into balls. Place on baking sheet and slightly flatten with the back of a fork.
  4. Bake for 8 minutes. Allow cooling for 2 minutes before transferring to a wire cooling rack
