Gingerbread Protein Cookies
- Preheat the oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper.
- Combine flaxseed meal and water in a bowl and allow it to sit for 5 minutes. Add peanut butter, maple syrup, and molasses. Whisk until creamy.
- Add protein powder, coconut flour, baking soda, and spices. Use a wooden spoon or spatula to stir until a soft dough forms. Take roughly 2 tbsp of dough at a time and roll into balls. Place on baking sheet and slightly flatten with the back of a fork.
- Bake for 8 minutes. Allow cooling for 2 minutes before transferring to a wire cooling rack
