Preheat the oven to 350 degrees. Line a muffin tin with muffin liners.
Mash banana in a large mixing bowl. Add mashed sweet potato, maple syrup, non-dairy milk, coconut oil, and vanilla. Whisk until combined. Add the remaining ingredients. Use a spatula or wooden spoon to stir until a smooth batter forms.
Fill each liner until almost full. Bake for 22-25 minutes until golden brown. Allow muffins to cool in the tin for 5 minutes before transferring to a wire cooling rack
