Go To The Dark Side For Nutrients

Bodybuilders favor brown rice because it's packed with protein, slow-burning carbohydrates and muscle-supporting minerals like magnesium, selenium, calcium and iron. But there's a lot more to like about this whole grain form of rice. Because brown rice is less refined than the more familiar white rice, it retains 60% to 80% more nutrients. That makes it a much better complement to lean meats like chicken breast and salmon.

The good news about brown rice gets even better with a study recently published in the Journal of Lipid Research. Scientists found that a new pre-germinated variety of brown rice that's due to hit U.S. grocery shelves in the near future contains healthy bioactive components called ASGs (acylated steryl-beta-glucosides) that are already a big hit in Japan.

The Bigger Picture: As with most foods, a good general rule of thumb for getting a heaping helping of healthy nutrients is to base your selections on color. Brown rice is better than white rice in the same way that orange sweet potatoes contain more phytonutrients than your basic white russet. They all have a place in your diet, of course. And you can maximize the good by eating a rainbow of different colored fruits and vegetables.
