What’s Cooking? Antioxidant BBQ!

Barbecue season is upon us, along with all the wonderful ways to enjoy meat proteins. According to a study published in the Journal of Food Consumption and Analysis, there's even more for healthy eaters to like about grilling. Turns out that brush-on barbecue sauces contain powerful antioxidants in the form of various herbs and spices.

Researchers tested 7 major brands of sauce, all of which are available at local grocery stores. There were very good quantities of antioxidants in all of the sauces. But they found that marinating meat before cooking reduced the potency of antioxidants by 45% to 70%.

True Strength Moment: Supplementing with a fast-digesting whey protein right after training kicks protein synthesis into gear. A couple of hours later, consuming a whole food protein like skinless chicken breast or a lean cut of steak keeps your muscle recovery going, and a splash of antioxidants can play a positive role in that rebuilding process. As an alternative to marinating, try applying the sauce when the meat comes off the grill. That's one way to get the full effect.
