Directions

  1. Combine all ingredients (except toppings) in a high-powered blender. Blend until smooth and creamy.
  2. Pour about ¼ cup of batter on to a preheated non-stick skillet. Cook until golden brown on both sides.
  3. Serve pancakes with fruit and nuts of choice.
