Protein Pancakes
Directions
- Place all the ingredients for the pancake batter into a mixing bowl and whisk together.
- Heat a large frying pan. Spray with low calorie oil spray.
- Spoon in the batter in small rounds. Keep the pancakes quite small as they will be easier to flip. Do not crowd the pan.
- Allow to cook on the first side for a few minutes until they are nicely browned and easy to turn. Then flip over and cook the other side until nice and golden. Remove to a plate and repeat with the rest of the batter. Add more oil as necessary.
- Serve with Greek yogurt & berries.
