Protein Muesli Cookie

1 cup dry oats 

½ cup almond flour 

4 scoops Gold Standard 100% Whey Protein, French Vanilla Creme

1 tsp ground cinnamon 

¼ tsp salt 

½ tsp baking soda 

2 tbsp maple syrup 

1 large egg 

1 tsp vanilla extract 

3 tbsp light olive oil 

Directions

  1. Pre-heat your convection oven to 350°. 
  2. Put the oats, almond flour, Gold Standard 100% Whey Protein powder, cinnamon, salt and bread soda into a mixing bowl and stir. 
  3. Add the maple syrup, egg, vanilla extract and olive oil and stir really well until a ball of dough is formed. 
  4. Divide into 10 equal sized pieces and roll to a ball before flattening to a cookie shape. 
  5. Place on a baking tray lined with parchment paper. 
  6. Bake for 15 minutes. Remove and allow to cool before eating.
