Protein Muesli Bars

  • 125g cashews
  • 75g pepitas
  • 150g rolled pats
  • 50g sunflower seeds
  • 50g slivered almonds
  • 50g currants
  • 50g sultanas
  • 3 scoops Optimum Nutrition Gold Standard Whey
  • 1/2 cup coconut oil
  • 1/2 cup honey (or rice malt syrup)
  • 1/4 cup water

Directions

1.      Preheat oven to 160 degrees and line a baking tray.

2.      In a bowl, mix together all dry ingredients. In a separate bowl, mix the coconut oil, honey and water. Microwave these wet ingredients for 30 seconds or until melted and then add to the dry ingredients. Mix well and then spread onto the baking sheet.

3.      Bake for 35-40 minutes until a deep golden brown.

4.      Remove and cool completely before slicing. Even store in fridge overnight to assist in hardening the bar up. Store in an air tight container.
