Protein Packed Smoked Salmon Crepes

For the crepes:

1 ¼ cups all-purpose flour

2 scoops Gold Standard 100% Whey Protein French Vanilla Crème

1 ⅔ cups skim milk

2 large eggs

Salt & pepper, to taste

To Fry: Low calorie spray oil

 

For the filling:

15 oz. boneless smoked salmon

3 sprigs, fresh dill leaves

2 ½ cups baby spinach leaves

¾ cup low fat cream cheese, at room temperature

Salt & pepper, to taste

 

(optional – lemon zest in batter and a squeeze lemon juice over filling)

Directions

  1. Mix the flour and Gold Standard 100% Whey Protein powder together in a bowl.
  2. Add half the milk and whisk to give a smooth batter.
  3. Add the eggs, the rest of the milk and some salt and pepper. Whisk again until well mixed.
  4. Heat a pancake griddle or a frying pan. Spray with a little oil.
  5. Pour in a ladleful of the batter and tilt the pan to spread evenly.
  6. Fry over a medium heat until beginning to brown underneath.
  7. Turn the pancake over with a spatula.
  8. Fry the second side until browned.
  9. Slide onto a plate and keep warm by covering with foil.
