Gingerbread men

Gingerbread men
  1. Heat the oven to 180c fan 180c and line 2 large baking sheets with 
    parchment.
  2. Gently melt the butter (or coconut oil) in a pan with the sugar and honey until smooth but not boiling.
  3. Sift the flour into a bowl to remove some of the coarser bran (which you discard). Add the protein powder, bicarbonate of soda and spices to the flour and mix with a whisk. Make a well in the centre and pour in the melted butter and sugar mixture then add the egg and use a wooden spoon to bring it together to a stiff dough. Turn out onto a lightly floured surface and knead briefly till smooth.
  4. Roll the dough out to about 5mm thick between two pieces of parchment paper then chill for at least 20 minutes.
  5. Cut out gingerbread men from the chilled dough, re rolling the trimmings between the parchment, and place them on the lined baking sheets.
  6. Bake for 12 minutes until golden. Leave to cool on the trays.
  7. To ice, mix the icing sugar with just enough water to make a stiff but pipeable icing. Spoon into a small piping bag with a small round nozzle and decorate your gingerbread men however you like.
