- Heat the oven to 180c fan 180c and line 2 large baking sheets with
parchment. - Gently melt the butter (or coconut oil) in a pan with the sugar and honey until smooth but not boiling.
- Sift the flour into a bowl to remove some of the coarser bran (which you discard). Add the protein powder, bicarbonate of soda and spices to the flour and mix with a whisk. Make a well in the centre and pour in the melted butter and sugar mixture then add the egg and use a wooden spoon to bring it together to a stiff dough. Turn out onto a lightly floured surface and knead briefly till smooth.
- Roll the dough out to about 5mm thick between two pieces of parchment paper then chill for at least 20 minutes.
- Cut out gingerbread men from the chilled dough, re rolling the trimmings between the parchment, and place them on the lined baking sheets.
- Bake for 12 minutes until golden. Leave to cool on the trays.
- To ice, mix the icing sugar with just enough water to make a stiff but pipeable icing. Spoon into a small piping bag with a small round nozzle and decorate your gingerbread men however you like.
