Protein christmas pudding balls
  1. Soak the dates in boiling water for 10 minutes to soften.
  2. In a food processor, blitz the oats and flax seed together, then add the peanut butter, protein powder, cocoa powder and dates along with 5 tbsp of the date soaking water. Blitz until it all comes together.
  3. Using your hands, roll into 16 even-sized balls and chill for at least 1 hour.
  4. Melt the chocolate in a bowl set over a pan of barely simmering water. Allow to cool a little so it's not too runny, then use a small spoon to drizzle over each protein ball. Decorate with a couple of shelled green pistachios and dried cranberries.
