Protein-Packed Chicken Sandwiches

2 cooked boneless, skinless chicken breast fillets

1 large carrot, grated

2 tablespoon light mayonnaise

2 teaspoons mild curry powder

1 scoop of Gold Standard 100% Whey Protein French Vanilla Crème

1 2/4 cups baby spinach leaves, packed

4 slices multi-grain bread

Salt, to taste

Directions

  1. Place the chicken breasts into a small pot of boiling water.
  2. Bring to the boil and then reduce to a simmer for 15-20 minutes until the chicken is cooked through and then drain.
  3. Once cooled shred the chicken with two forks (or beat with a hand-mixer) and place in a bowl.
  4. Add in the grated carrot, mayonnaise, curry powder and the Gold Standard 100% Whey Protein powder with a little pinch of salt.
  5. Give everything a really good mix.
  6. Spread on the multi-grain bread and top with spinach leaves before sandwiching with the second slice of bread.
