High Protein French Toast
Directions
- For the compote place the summer berries, caster sugar, water and Gold Standard 100% Whey Protein powder in a small pot. Bring to the boil, stirring continuously until well combined. Simmer for 2-3 minutes until the compote has thickened.
- For the French toast whisk together the eggs, milk, vanilla extract and Gold Standard 100% Whey Protein powder until smooth.
- Pour into a wide shallow bowl and add the bread. Allow the bread to soak up the egg mix for a minute and then flip over and repeat with the other side until the bread is well coated.
- Spray some oil into a large frying pan. Turn on the heat to a high heat. Add in the soaked bread. (Cook in batches.) Fry for a few minutes on each side until nice and golden. Remove from the pan and cut into triangles and serve with the berry compote.
