No-Bake Carrot Cake Cookies

  • ripe banana
  • 3 tbsp maple syrup
  • 2 tbsp melted coconut oil
  • 2 tbsp creamy peanut butter
  • 1 Scoop Gold Standard 100% Plant Protein powder - used unflavored
  • 1 cup rolled oats
  • ½ cup Shredded carrot
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of flaky sea salt or 1/4 tsp table salt
  • (Optional): ¼ cup dark chocolate chips - not included

Directions

  1. In a large mixing bowl, mash the banana until smooth. Whisk in coconut oil, peanut butter, and maple syrup until creamy. Add protein powder, rolled oats, carrot, spices, and salt. Use a wooden spoon or spatula to combine until a sticky dough forms. Fold in chocolate chips.
  2. Use a small cookie scoop to portion out dough. Form into a small disc and place on a parchment-lined baking sheet. Transfer to the freezer to set for 5 minutes.
  3. Store in an airtight container in the fridge.
