No-Bake Carrot Cake Cookies

- In a large mixing bowl, mash the banana until smooth. Whisk in coconut oil, peanut butter, and maple syrup until creamy. Add protein powder, rolled oats, carrot, spices, and salt. Use a wooden spoon or spatula to combine until a sticky dough forms. Fold in chocolate chips.
- Use a small cookie scoop to portion out dough. Form into a small disc and place on a parchment-lined baking sheet. Transfer to the freezer to set for 5 minutes.
- Store in an airtight container in the fridge.
